Our High-Test Molasses Rum is the third release in our Trials & Exceptions series—a collection of limited-release spirits that seeks to uncover our most exceptional single casks and small batch trials, offering first-hand insights into the raw ingredients, processes and people involved in the production of our spirits.
This rum features the finesse of high-test molasses, which is expressed before the first removal of sugar during the extraction process and known for its elegant style. To add richness to the spirit, a small amount of bold blackstrap molasses was added to the fermentation, with both types of molasses produced from sustainably grown and milled sugarcane sourced from NSW farms.
To retain the richness of the raw ingredients, the spirit was mindfully distilled in copper pot stills before being aged in 100L Australian Port casks and bottled at its natural cask strength.
Presenting at 72.7% ABV, this overproof rum is for serious rum enthusiasts, displaying a delightful tension between sweet and savoury elements, offering notes of sea spray, Anzac biscuits and sticky date pudding with custard.
