Another astronomy-inspired blended malt from North Star Spirits - this time, they've named an expression after Sirius, the brightest star in the night sky, and sometimes known as the Dog Star because f its importance in the Canis Major constellation. The whisky itself is 31 years old, and was drawn from first-fill bourbon casks in 2019. A release of 3582 bottles.
Tasting Note by The Chaps at Master of Malt
Nose: Big waves of charred oak and coffee, with lighter hints of orange oil and heather honey.
Palate: Chocolatey at first. Walnut, almond and Brazil nut, all with a hint of smokiness.
Finish: Dried cedar, slightly oily, sultana, toffee.
